Adapt To Nature

Our mantra for working sustainably originates from our home in rural Proença-a-Nova, where farmers, growers, and artisans must Adapt to Nature every day. Inspired by their example, we craft every product locally and sustainably, from forest to bottle.


Forest to Bottle

  • Except for juniper, we always pick local wild plants, many of which are from the forest surrounding our distillery. We do this because we believe a wild plant harvested from the forest always surpasses its cultivated cousin, as nature itself has allotted it its rightful place and with the best possible ingredients. When done sustainably, this supports local biodiversity—ensuring the forest remains relevant and vibrant for wildlife and future generations to come.

  • We prefer to work with fresh wild plants, drawn to their vivid colours, vibrant aromas, and intense flavours. Drying is the exception, not the rule—but when we do, it's with purpose. Olive and fig leaves are two such exceptions: their profiles deepen when dried, developing a green-tea bitterness and a warm, baked coconut note. We dry them slowly in the shaded, ventilated calm of a barn, turning them regularly. Once entirely dried, each plant is sealed in an air-tight glass jar to preserve its character.

  • We express plants into drinks through naturally occurring techniques, such as distillation, maceration and decoction. Distillation gently steams plants—separating volatile oils and delicate flavours into herbal distillates and alcoholic spirits. Maceration, a slower and earthier process, submerges herbs in alcohol, drawing out deep, rich compounds over time. These methods capture the plant's essence, revealing different layers in each expression: from bitterness to floral top notes, resinous warmth, and more.

  • Blending plant-based expressions into drinks is an art form rooted in an instinct for nature as well as taste. Each plant—whether it's minty eucalyptus or resiny pine needle—carries a colour, aroma, and taste that is unique. When harmonised with skill, they tell a story of the forest, the season, or simply the natural complexity of a plant itself in a single sip.

  • Our drinks are made from forest to bottle without artificial preservatives and bottled at natural colour.
